Due to the scheduling, logistics, and up front investment involved, we can only offer a 100% refund, if you cancel your class within 45 days of the date.

ABOUT THE CLASS

INCLUDES:
Class is a two (2) day class. See Curriculum Page for more information.
 

A copy of Chef Polcyn’s book Charcuterie or SalumI for each attendee.
 

Charcuterie for each attendee to bring back to your restaurant to finish curing and sell in your restaurants.
 

Wine and Beer pairings and Q & A session at the end of each day .

CLASS REQUIREMENTS:

Each attendee must bring a 6" boning knife, apron. & notepad. 

PLEASE NOTE: Only still photos are allowed during the class.

No video or audio devices are allowed during the class. This means no iPads or other tablet devices, Smartphones, cell phones. voice recorders or cameras of any kind.
